Our team at Aubergine was started with husband and wife, Bjorn and Megan Jacobse. With a passion for extraordinary restaurants, the two began a company to do just that. We are poised to bring our vast knowledge and past experiences of the hospitality industry to Aubergine. Through Aubergine, we find the balance between approachable and thought-provoking dining experiences that provide space for curiosity and human connectivity to flourish.

Bjorn Jacobse
Founder & Chef
Bjorn has been working under critically acclaimed chefs for most of his professional career. From Montreal, Quebec to Portland, OR and back to the Twin Cities, he has developed a clear vision for his style of cuisine taking influence from the many places he has lived and visited. He takes immense pride and care in the food he creates for our guests and is always focused on inspiring those around him (which often is reciprocated).
Megan Jacobse
Founder & Operations Director
Megan has been building her career in hospitality across the United States, but most recently in Portland, Oregon. Starting from the ground up, she has worked in most front of house positions in a variety of concepts from casual to fine dining. Growing up in a family of physicians, she learned to understand the important link between human connection, restoration and healing and plans to bring that ethos to the hospitality of Aubergine.
